Eating American Pancakes for breakfast is one of the most delicious ways to start the day! This is an old recipe and traditionally American but is now enjoyed all over the world as a very satisfying breakfast. You can use numerous toppings and side dishes to accompany these pancakes and they are definitely a hit with children! If you are in a rush in the mornings then make the batter the night before and simply fry the pancakes in the morning.
Preparation Time: 10 minutes
Cooking Time: 5 minutes
Makes 10 Pancakes (the batter can be saved for another day if this is too much to cook at once)
Ingredients:
200g (7oz) all-purpose flour or plain flour
1/2 tablespoon baking powder
2 eggs
300ml (10.5 fl oz) buttermilk
oil or butter for frying
Making the batter:
1. Mix together the flour, baking powder and a pinch of salt in a large bowl.
2. Beat both eggs with the buttermilk.
3. Pour the egg and milk mixture into the flour and mix with a wooden spoon until it produces a thick and smooth batter with no lumps (this can take several minutes).
Cooking the pancakes:
4. Heat the oil or butter in a large frying pan on a low-medium heat.
5. Once the pan and oil is hot, pour on the batter using a large tablespoon or ladel, you should be able to cook between 3 and 4 pancakes at a time.
6. After around 3 minutes (or until golden brown on the under-side) flip the pancakes with a spatula or fish slice and cook for a further 2 minutes.
Serving Suggestions:
Place a knob of butter on top of the pancakes and then pour over the desired amount of maple syrup, this is the authentic way of doing things! You can also add fresh fruit or yogurt for a healthier option. These pancakes are also a delicious accompaniment with streaky bacon. As for a drink, nothing beats a good cup of coffee or a hot chocolate for the kids.
